Chapter 2: Building the Foundation
September 2026
The vision is beginning to take form.
Mayita’s Café has moved from an idea into a formally established Texas business with its own identity, online home, and growing community. These may seem like administrative steps, but together they form the foundation needed to build the business responsibly.
Our website at MayitasCafe.com was created to do more than sell products. It will introduce customers to Honduran coffee, document the development of the business, share the story of the land in Jesús de Otoro, and eventually connect individual customers and wholesale partners with coffees whose origins can be clearly communicated.
Behind the scenes, we have begun evaluating coffee importers, suppliers, roasters, private-label programs, and fulfillment partners. The questions go beyond price. We are examining coffee origin, quality, traceability, certifications, roasting capabilities, packaging, shipping, and whether each potential partner can grow with the long-term vision of Mayita’s Café.
From green coffee to the cup—evaluating Honduran beans, roast profiles, and flavor to find the right coffee for Mayita’s Café.
We have also started evaluating Honduran coffees firsthand. Samples from different regions and sourcing programs have been roasted, cupped, compared, and brewed. The process has already reinforced an important lesson: an impressive name or description cannot replace the experience of tasting the coffee and understanding how sourcing, roasting, and preparation affect the final cup.
No final coffee partner has been announced yet. Choosing carefully matters more than moving quickly. Before coffee carries the Mayita’s Café name, we want confidence in its quality, its Honduran identity, the reliability of the roasting and fulfillment process, and the accuracy of the story we share with customers.
During this prelaunch period, Mayita’s Café has also begun offering branded merchandise. This gives early supporters an opportunity to become part of the story while the coffee program is being developed.
The path ahead includes selecting our initial coffee and roasting partner, introducing our first branded coffee, building relationships with retail and wholesale customers, and eventually purchasing and importing green Honduran coffee through more direct supply relationships.
The larger vision remains unchanged: to responsibly develop portions of our family property in Jesús de Otoro into a working coffee farm while protecting the land that should remain undisturbed.
Chapter 2 is about preparation—learning the industry, testing the coffee, asking difficult questions, and building a business capable of supporting that larger vision.
Thank you for being here near the beginning.
Rooted in Honduras. Growing toward the future.
